Ingredients
  

  • ½ cup 60g all-purpose flour
  • ¼ cup 20g unsweetened cocoa powder (Dutch-process preferred)
  • ¼ tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • ½ cup 115g unsalted butter, melted
  • ½ cup 100g granulated sugar
  • ¼ cup 50g brown sugar
  • 1 large egg
  • 1 tsp vanilla extract

Optional Add-Ins

  • ¼ cup 45g mini chocolate chips
  • ¼ cup 30g chopped walnuts or pecans
  • Flaky sea salt for topping

Instructions
 

Step 1: Prep the Pan

  • Preheat oven to 350°F (175°C).
  • Lightly grease a mini muffin pan with cooking spray or line with mini muffin liners.

Step 2: Mix Dry Ingredients

  • In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.

Step 3: Combine Wet Ingredients

  • In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  • Add the egg and vanilla, mixing until fully incorporated.

Step 4: Fold in Dry Ingredients

  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Fold in chocolate chips or nuts (if using).

Step 5: Fill & Bake

  • Use a small scoop or spoon to fill each muffin cup ¾ full.
  • Bake for 10-12 minutes, until the edges are set but the centers are still slightly soft.

Step 6: Cool & Serve

  • Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
