- 2 steelhead trout fillets 6 oz each, skin-on
- 2 tbsp olive oil
- 1 lemon juice and zest
- 2 garlic cloves minced
- 1 tsp dried rosemary or fresh
- Salt and freshly ground black pepper to taste
- Fresh parsley optional, for garnish
Preheat Oven: Set your oven to 400°F (200°C).
Prepare Baking Dish: Lightly grease a baking dish or line it with parchment paper.
Season the Trout: Place the fillets skin-side down in the dish. Drizzle with olive oil, then season with salt, pepper, minced garlic, lemon zest, and rosemary.
