Ingredients
  

  • 2 steelhead trout fillets 6 oz each, skin-on
  • 2 tbsp olive oil
  • 1 lemon juice and zest
  • 2 garlic cloves minced
  • 1 tsp dried rosemary or fresh
  • Salt and freshly ground black pepper to taste
  • Fresh parsley optional, for garnish

Instructions
 

  • Preheat Oven: Set your oven to 400°F (200°C).
  • Prepare Baking Dish: Lightly grease a baking dish or line it with parchment paper.
  • Season the Trout: Place the fillets skin-side down in the dish. Drizzle with olive oil, then season with salt, pepper, minced garlic, lemon zest, and rosemary.
  • Add Lemon Slices: Place thin lemon slices on top of the fillets or around them in the dish.
  • Bake: Bake for 12–15 minutes, or until the fish flakes easily with a fork and is opaque.
  • Garnish & Serve: Sprinkle with fresh parsley and serve immediately with your favorite sides.
